Virtual Cookie Swap: Chocolate Cookie Recipe




Here is my offering of a chocolate cookie recipe for the Virtual Cookie Swap hosted by Kathy at Bermudaonion's Weblog and Julie at Booking Mama. I don't know how anyone will be able to choose from among the myriad of yumilicious recipes these women have been tossing around. And today's the day that all of us get to chime in with our own family favorites. Check out these posts . . . if you dare!

Chocolate Chip Pecan Oatmeal Cookies
(with Secret Ingredient)
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 tsp. vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1 tsp. salt (you can omit this if you use salted butter)
3 cups quick-cooking oats
1 cup finely chopped pecans (you can use walnuts but I prefer pecan)
1 cup semisweet chocolate chips
 
1. Preheat the oven to 325 degrees 
2. Cream together butter, brown sugar and white sugar until smooth.
3. Beat in eggs one at a time.
4. Add vanilla.
4. Combine the flour, baking soda and salt and stir into the creamed mixture until just blended.
5. Mix in the quick oats, walnuts and chocolate chips.
6. Drop by heaping spoonfuls onto ungreased baking sheets.
7. Bake for 12 minutes in the preheated oven.
8. Cool and eat. Or don't cool and eat.
9. Serve with ice-cold milk.

Pssst: What about the Secret Ingredient? Well, there's no measurement for this, but I like to sprinkle in some cinnamon and an itsy-bitsy dash of nutmeg. Once I started adding that, I repeatedly got the comment that these were the best cookies ever eaten!

These look so good! I have been collecting cookie recipes for the past couple of weeks from various sites participating in the cookie swap. I think it's a really cool idea! Thanks for the great recipe!
